Ingredients
  1. 2–3 lbs. ribs (take your pick: pork ribs, beef ribs, and so on)
  2. salt and pepper
  3. garlic powder
  4. barbecue sauce of choice
Instructions
  1. 1. Line baking pan with aluminum foil.
  2. 2. Season ribs with salt and pepper and a little garlic powder on both sides. Place ribs in pan, meaty side up. Bake in oven at 350°F for 30–45 minutes.
  3. 3. Baste the roasted ribs with barbecue sauce and bake at 350°F for an additional 45–60 minutes or until the ribs are tender, basting every 15 minutes or as needed. The meat will begin to separate from the rib when done.

Mother’s Day Treat — Belgian Waffles

Ingredients
  1. 4 eggs, separated
  2. ½ tsp. vanilla
  3. 3 Tbsp. butter, melted
  4. 1 Cup milk
  5. 1 Cup flour
  6. ½ tsp. salt
  7. 2 Cups strawberries, sliced and sprinkled with sugar (Optional)
  8. 1 pint whipping cream (optional)
Instructions
  1. 1. Beat yolks until very light. Add vanilla, butter, and milk and mix. Combine flour and salt and add to egg mixture. Beat well.
  2. 2. Beat egg whites until stiff and fold into batter.
  3. 3. Cook on medium-high heat for 3–4 minutes or until light brown. If you’re using a non-electric device, be sure to turn the waffle iron over after 30 seconds to 1 minute so the batter runs into the other side of the iron.
  4. 4. Serve with strawberries and whipped cream or other toppings.
Notes
  1. There's no waffling about how good these are!

Ingredients
  1. One 14 1/2-ounce can sauerkraut
  2. 2 tablespoons mayonnaise
  3. 3 drops green food coloring (optional)
  4. 1 loaf sliced sourdough French bread or rye bread
  5. 10 ounces Swiss cheese
  6. 10 ounces thinly sliced corned beef
  7. Thousand Island dressing (optional)
Instructions
  1. Drain and squeeze the water from the sauerkraut. In a microwavable bowl, combine the mayonnaise, sauerkraut, and food coloring, if using, and mix. Butter 1 side of each piece of bread.
  2. Heat a frying pan over medium heat. Place the sauerkraut in the microwave for about 1 minute. Put 1 slice of bread, butter side down, in the pan. Put slices of cheese on the bread first, then meat, then sauerkraut, and some Thousand Island, if using. Put other slice of bread on top, butter side up.
  3. Reduce the heat to medium-low and cook, making sure the bread does not burn. When the bottom is browned and the cheese is melted, flip and cook until the second side is brown.* Repeat until all of the meat is used up. If desired, drizzle Thousand Island dressing on top of each sandwich when ready to serve.

Cranberry Chutney

Cranberry Chutney

Ingredients
  1. 1 cup water
  2. 3/4 cup white sugar
  3. 1 (12 ounce) package fresh cranberries
  4. 1 cup apples - peeled, cored and diced
  5. 1-2 Tbs to ½ cup cider vinegar (depending upon desired tartness)
  6. 1/2 cup raisins
  7. 1/2 teaspoon ground cinnamon
  8. 1/4 teaspoon ground ginger
  9. 1/4 teaspoon ground allspice
  10. 1/8 teaspoon ground cloves
DIRECTIONS
  1. 1. In a medium saucepan combine the water and sugar. Bring mixture to a boil over medium heat. Add the cranberries, apples, cider vinegar, raisins and spices. Bring to a boil, then simmer gently for 10 minutes stirring often.
  2. 2. Pour mixture into a mixing bowl. Place plastic wrap directly on the surface of the sauce. Cool to room temperature and serve or cover and refrigerate. Bring chutney to room temperature before serving.
Notes
  1. This is a chutney...it has bite. If you want a cranberry sauce version, reduce vinegar to 1-2 Tbs.
